    Winter Blues Breakfasts

    Angela Beck

Winter mornings, when we rise before the sun, have to bundle up the minute we leave our cozy beds and then again before we dare leave the house, are rough. A warm and filling ‘stick-to-your-ribs’ breakfast is just the ticket to help put a spring in your step—until we actually get to spring. And including some goodness like antioxidant-rich blueberries, protein-filled nuts and fiber-filled seeds is guaranteed to keep your bod happy. Read on for three favorite, no-cook winter breakfasts.

    Breakfast Trail Mix

Combine dried blueberries with raw almonds, coconut chips, your favorite cereal and pumpkin seeds and portion out individual servings for easy grab-and-go breakfasts. There are flip-top lid plastic mason jar–type containers available on Amazon that are perfect for doling out handfuls on the run.

    Blueberry Muffin Slices

Store-bought or few-days-old blueberry muffins are given new life when sliced vertically and toasted in a toaster oven or broiler. Slather the warm, crusty slices with your favorite nut or seed butter.

    Make Your Own Parfait

A fun and relatively easy breakfast for a crowd, parfaits are also a good way to clear out some odds and ends in the fridge and pantry. Fill a medium sized bowl with Greek yogurt then smaller bowls with thawed frozen blueberries (we like Wyman’s), sliced bananas, pomegranate seeds, sunflower seeds, toasted coconut flakes and anything else that sounds good. Provide honey and maple syrup for anyone who wants to add more sweetness.

Pomegranate’s blue and white collections pair beautifully with winter breakfasts—and you can shop those here.
